This crispy deep-fried fish quesadilla is a common beach snack to munch on back in Mexico. Inside the shells of quesadillas are bits of soft fish cooked with sofrito and fresh vegetables. The quesadillas are served with lime, topped with slices of avocados, and a drizzle of Valentina sauce. The sauce, from Mexico, is made out of vinegar, puya chiles, and a variety of spices. All of the textures and flavors together makes this an ideal summer snack.
